- Preheat your oven to 400°F (200°C). Slice the top off a medium head of garlic, drizzle it with olive oil, and wrap it snugly in aluminum foil. Roast it in the oven for 30-35 minutes until the cloves are soft and caramelized.
- While the garlic roasts, heat a skillet over medium heat and add olive oil. Toss in fresh spinach and sauté for 2-3 minutes until wilted. Season with salt and pepper. Set aside.
- Once the garlic is roasted and cool enough to handle, squeeze the cloves into a bowl and mash into a smooth paste. Mix in ricotta cheese, half of the shredded mozzarella, dried oregano, and a sprinkle of salt and pepper. Blend until creamy.
- Grab your pre-made pizza crust and spread the creamy garlic-ricotta mixture evenly across the surface using a spatula. Layer the sautéed spinach over the cheese base. Sprinkle the remaining mozzarella and crumbled feta on top.
- Increase the oven temperature to 475°F (245°C). Bake the pizza for 15-20 minutes until the crust is golden brown and cheese is bubbly.
