Method
 

Cookie Dough Preparation
  1. Cream the softened butter with granulated sugar and brown sugar until light and fluffy, about 2-3 minutes.
  2. Beat in the eggs and vanilla until well incorporated.
  3. Gradually mix in cake flour and cinnamon until just combined.
  4. Chill the dough in the refrigerator for at least 1 hour.
Filling Preparation
  1. In a medium bowl, mix together softened butter, brown sugar, and cinnamon.
  2. Stir in flour until a thick mixture forms.
  3. Roll small portions into balls, about 2 teaspoons each, and set aside.
Assembling Cookies
  1. Divide chilled dough into ¼ cup portions, flatten into discs.
  2. Place a filling ball in the center and cover with another disc, sealing edges.
  3. Roll the filled dough ball to ensure it's smooth.
Baking
  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Space cookies on the sheet and bake for 11-13 minutes until edges are golden.
  3. Cool on the sheet for 5 minutes before transferring to a wire rack.
Glaze Application
