- In a large mixing bowl, whisk together your choice of milk or non-dairy milk, chia seeds, maple syrup, vanilla extract, and molasses. Add in all the spices: ground cinnamon, nutmeg, clove, and ginger. Mix thoroughly until the ingredients are evenly combined and you see no clumps of chia seeds forming, which should take about 2-3 minutes.
- Cover the bowl with plastic wrap or a lid and allow the mixture to rest at room temperature for 5-10 minutes.
- After letting it sit, give the mixture another good stir.
- Transfer the bowl to the refrigerator and let the pudding chill for at least 3-4 hours, preferably overnight.
- Once chilled, remove the bowl from the fridge and give the pudding one final stir.
- Spoon the pudding into serving bowls or jars, and top with your favorite toppings such as chopped nuts, fresh fruit, or whipped cream.
