  • 1 cup Breadcrumbs Use gluten-free varieties if needed
  • 2 large Large Eggs Substitute with flaxseed meal mixed with water for vegan option
  • 1 cup Diced Onion Scallions can be a milder substitute
  • 2 tablespoons Soy Sauce Low-sodium recommended or tamari for gluten-free
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
For Topping
  • 1/2 cup Additional Parmesan Cheese For topping
  • Paprika or Italian Seasoning Optional for added flavor

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C). Grease a baking dish or line it with parchment paper.
  2. In a medium skillet, heat a splash of oil over medium heat, then add the diced onions. Sauté for about 5 minutes until soft and translucent.
  3. In a large mixing bowl, combine the ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the grated Parmesan cheese. Mix until fully integrated.
  4. Transfer the mixture to the prepared baking dish and shape it into a loaf form.
  5. Sprinkle remaining Parmesan cheese over the top of the meatloaf. Optionally add paprika or Italian seasoning.
  6. Bake for 45-50 minutes until the top is golden brown and internal temperature reaches 165°F (74°C).
  7. Allow the meatloaf to rest for about 10 minutes before slicing.
  8. Slice into hearty portions and serve warm with your favorite sides.
