- Preheat the oven to 375°F (190°C) and gather all ingredients.
- In a large mixing bowl, combine ground chicken, grated Parmesan, breadcrumbs, parsley, garlic, beaten egg, oregano, salt, pepper, and milk. Mix gently until combined.
- Divide the mixture into four equal portions and shape into small loaves (about 4 inches long).
- Lightly grease a baking sheet with olive oil and arrange the meatloaves on it.
- Bake for 25-30 minutes until the internal temperature reaches 165°F (74°C) and they are golden brown.
- In the last 5 minutes of baking, sprinkle mozzarella cheese on top of each meatloaf if desired.
- Remove from oven and let rest for 5 minutes before slicing and serving.
