Method
 

Cooking Instructions
  1. Cut the beef stew meat into 1-inch pieces and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear beef in batches for 2-3 minutes on each side until browned.
  3. In a mixing bowl, whisk together melted butter, minced garlic, thyme, rosemary, and parsley.
  4. Quarter the red potatoes and layer them on top of the beef in the slow cooker.
  5. Whisk together beef broth and soy sauce and pour over the beef and potatoes.
  6. Cover slow cooker and cook on low for 7-8 hours or high for 3-4 hours.
  7. Stir gently to combine and garnish with fresh parsley before serving.
