Cooking Instructions
- Cut the beef stew meat into 1-inch pieces and season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear beef in batches for 2-3 minutes on each side until browned.
- In a mixing bowl, whisk together melted butter, minced garlic, thyme, rosemary, and parsley.
- Quarter the red potatoes and layer them on top of the beef in the slow cooker.
- Whisk together beef broth and soy sauce and pour over the beef and potatoes.
- Cover slow cooker and cook on low for 7-8 hours or high for 3-4 hours.
- Stir gently to combine and garnish with fresh parsley before serving.
