Ingredients
  

For the Salad
  • 4 cups arugula can substitute with baby spinach
  • 1 bulb fennel thinly sliced
  • 2 medium apples e.g., Granny Smith or Honeycrisp
  • 1/2 cup walnuts can substitute with pecans or sunflower seeds
  • 1/4 cup Parmesan cheese can substitute with nutritional yeast
For the Dressing
  • 2 tablespoons olive oil can substitute with avocado oil

Method
 

Preparation
  1. Wash and dry the arugula, then place it in a large salad bowl.
  2. Slice the fennel bulb thinly and add it to the bowl with the arugula.
  3. Core and slice the apples into thin wedges, then add to the salad bowl.
  4. Chop the walnuts and toast them lightly, then sprinkle over the salad.
  5. Shave or crumble the Parmesan cheese over the salad.
  6. Drizzle with olive oil and gently toss to combine ingredients.
  7. Season with salt and pepper to taste, serve immediately.
