Method
 

Step-by-Step Instructions
  1. Wash and halve the apricots, discarding the pits. Chop the fruit into small pieces and place them into a large pot.
  2. Add granulated sugar and lemon juice to the pot. Stir well and let it sit for 15 minutes over medium heat.
  3. Split the vanilla bean and scrape the seeds into the pot, including both seeds and pod, along with cardamom.
  4. Increase to medium-high heat and bring to a rolling boil, stirring constantly for 5-10 minutes.
  5. Reduce heat to medium-low and simmer for 20-30 minutes, stirring occasionally until the desired thickness.
  6. Use the cold plate trick to test doneness: if it wrinkles, it's ready.
  7. Remove the vanilla pod, pour jam into sterilized jars, leaving 1/4 inch headspace.
  8. Process the jars in a boiling water bath for 10 minutes to seal properly.
