- Wash and halve the apricots, discarding the pits. Chop the fruit into small pieces and place them into a large pot.
- Add granulated sugar and lemon juice to the pot. Stir well and let it sit for 15 minutes over medium heat.
- Split the vanilla bean and scrape the seeds into the pot, including both seeds and pod, along with cardamom.
- Increase to medium-high heat and bring to a rolling boil, stirring constantly for 5-10 minutes.
- Reduce heat to medium-low and simmer for 20-30 minutes, stirring occasionally until the desired thickness.
- Use the cold plate trick to test doneness: if it wrinkles, it's ready.
- Remove the vanilla pod, pour jam into sterilized jars, leaving 1/4 inch headspace.
- Process the jars in a boiling water bath for 10 minutes to seal properly.
