Step‑by‑Step Instructions
  1. Make Watermelon Juice: Cut ripe watermelon into chunks, blend until smooth, and strain to extract ¾ cup of juice.
  2. Prepare Mochi Mixture: Mix glutinous rice flour, maple sugar, and tapioca starch, then add the watermelon juice and 1 tablespoon of avocado oil.
  3. Cook Mochi: Heat a skillet, add 1 tablespoon avocado oil, pour in the mixture, and stir for 3-4 minutes until thick and stretchy.
  4. Shape the Mochi: Transfer to a surface, flatten into a square about ½-inch thick, cover with parchment, and chill for 1-2 hours.
  5. Dust & Cut: Dust with glutinous rice flour, then cut into pieces and dust again to prevent sticking.
