- In a large pitcher, combine 4 cups of pear juice, 1/4 cup of freshly squeezed lemon juice, and 1/4 cup of honey, stirring until the honey dissolves.
- Gently muddle 4 sprigs of fresh thyme into the mixture.
- Cover the pitcher and refrigerate for at least 10 minutes.
- Stir in 4 cups of sparkling water before serving.
- Fill glasses with ice and pour in the mocktail.
- Garnish each glass with pear slices and thyme sprigs.
