Preparation
  1. In a large mixing bowl, add 1 cup of cold heavy cream. Use an electric mixer to beat the cream on medium speed until stiff peaks form, about 3 to 5 minutes.
  2. In a separate bowl, combine 1 cup of softened mascarpone cheese, 1 cup of slightly warmed ube halaya, 1/4 cup of sweetened condensed milk, and 1 teaspoon of vanilla extract. Blend until smooth, taking about 1 to 2 minutes.
  3. Carefully fold the whipped cream into the mascarpone mixture until fully combined, ensuring the mixture stays airy.
  4. In a shallow bowl, mix together 1/2 cup of whole milk and 2 tablespoons of ube extract. Dip each ladyfinger into the mixture for a quick second, then place them on a plate.
  5. Assemble your Ube Tiramisu in a Jar by placing a layer of soaked ladyfingers at the bottom, followed by a generous layer of the ube cream mixture. Repeat the process for a second layer.
  6. Sprinkle crushed ube cookies or graham crackers on top for added texture. Cover and refrigerate for at least 2 hours, preferably overnight.
