- Preheat your oven to 350°F (175°C) and grease an 8×8 or 9×9-inch baking dish.
- In a blender, combine the full-fat cottage cheese and large eggs. Blend for about 30 seconds until smooth.
- Transfer the mixture into a mixing bowl. Add almond flour, sweetener, vanilla extract, lemon zest, and baking powder. Stir gently for about a minute.
- Fold the mixed berries into the batter, being careful not to break them. If using frozen, sprinkle with almond flour.
- Pour the berry-infused batter into your greased baking dish and spread evenly.
- Bake for 35–40 minutes until golden on top and the center is set.
- Let the bake cool for 20–30 minutes before slicing into squares.
- Serve and enjoy! It can be enjoyed warm or stored in the fridge for up to five days.
