  • 1 teaspoon Baking Powder
  • 2 cups Mixed Berries (fresh or frozen) No need to thaw if frozen

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease an 8×8 or 9×9-inch baking dish.
  2. In a blender, combine the full-fat cottage cheese and large eggs. Blend for about 30 seconds until smooth.
  3. Transfer the mixture into a mixing bowl. Add almond flour, sweetener, vanilla extract, lemon zest, and baking powder. Stir gently for about a minute.
  4. Fold the mixed berries into the batter, being careful not to break them. If using frozen, sprinkle with almond flour.
  5. Pour the berry-infused batter into your greased baking dish and spread evenly.
  6. Bake for 35–40 minutes until golden on top and the center is set.
  7. Let the bake cool for 20–30 minutes before slicing into squares.
  8. Serve and enjoy! It can be enjoyed warm or stored in the fridge for up to five days.
