Method
 

Preparation Steps
  1. Cut the boneless chicken into thin strips, about 1 inch wide.
  2. In a bowl, whisk together the soy sauce, brown sugar, coconut milk, curry powder, minced garlic, and lime juice. Pour over chicken and marinate for at least 30 minutes.
  3. Soak bamboo skewers in water for 15 minutes to prevent burning.
  4. In a saucepan, combine peanut butter, soy sauce, lime juice, honey, minced garlic, and a splash of coconut milk. Heat and stir until smooth.
  5. Thread marinated chicken onto soaked bamboo skewers.
  6. Preheat grill to medium-high heat. Grill chicken skewers for 4-5 minutes per side, until internal temperature reaches 165°F.
  7. Let skewers rest for a few minutes then serve with the peanut sauce.
  8. Optional: Garnish with sesame seeds or chopped cilantro.
