- Prepare the Tofu: Wrap the tofu in a clean kitchen towel, gently squeeze to remove excess moisture for about 10 minutes. Cut into 3/4 to 1-inch cubes.
- Fry the Tofu: Heat oil in a pan over medium-high heat. Fry tofu cubes for 3-4 minutes on each side until golden brown and crispy.
- Sauté Aromatics: Melt coconut oil in a skillet. Sauté shallots until soft, then add minced ginger and cook for 30 seconds.
- Prepare the Sauce: Add coconut milk, sambal oelek, red curry paste, sugar, and kosher salt. Simmer for 3-4 minutes until thickened.
- Combine Tofu and Sauce: Add crispy tofu into the sauce, stir to combine, tasting and adjusting seasoning as needed.
- Serve: Transfer to a dish, garnish with scallions, red pepper flakes, and sesame seeds. Serve immediately with jasmine rice and vegetables.
