Step-by-Step Instructions for Maple Pumpkin Granola
- Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper or a silicone mat.
- Melt approximately 1/4 cup of coconut oil in the microwave for about 30 seconds to 1 minute. Mix in 1/3 cup of maple syrup and 1 cup of pumpkin puree until well combined.
- Add 3 cups of rolled oats, 1 cup of coconut flakes, 1/2 cup of chopped pecans, 1/2 cup of pumpkin seeds, 1 teaspoon of pumpkin pie spice, and a pinch of flaked sea salt to the wet mixture. Stir vigorously.
