Prepare the Pie Crust
- Roll out your flaky pie crust onto a lightly floured surface until it reaches about 1/8 inch thick. Fit into a 9-inch pie dish, chill for 30 minutes.

- Core and slice your Honeycrisp apples to about 1/4 inch thick, toss with brown sugar and let it sit for 15 minutes.

- Mix together pecans, corn syrup, salted caramel, and vanilla extract in a bowl until combined.
Blend the Pumpkin Pie Filling
- Combine pumpkin puree, chocolate chips, pumpkin spice, and dairy-free milk and blend until smooth.
Assemble the Pies
- Pour the fillings into prepared pie crusts. Sprinkle toppings if desired.
Bake the Pies
- Bake in preheated oven; apple pie for 45-50 minutes, pecan pie for 60 minutes.
