Ingredients
  

For the Corn Ribs
  • 4 ears Fresh Corn Long ears for perfect rib shape
  • 2 tablespoons Olive Oil Can be swapped with avocado oil
  • 1 teaspoon Sweet Paprika Powder Consider using smoky paprika
  • 1 teaspoon Garlic Powder Fresh minced garlic can be used
  • to taste Salt
  • to taste Pepper
For the Aleppo Chili Butter
  • 1/2 cup Vegan Butter Use unsalted for better control
  • 1 tablespoon Aleppo Chili Flakes Feel free to use other mild chili flakes
For the Lime Zest Cream Cheese
  • 1 cup Vegan Cream Cheese Nut-based cream cheese is an alternative
  • 1 tablespoon Lime Can substitute with lemon juice
  • 1/4 cup Toasted Pine Nuts Walnuts can be used or omitted
  • 2 tablespoons Green Onion Chives can be used in its place
  • 1/4 cup Coriander (or Parsley) Use whichever herb you prefer
  • 1 teaspoon Lime Zest (for garnish) Optional for added zestiness

Method
 

Preparation
  1. Remove the husks and silk from the fresh corn, trim the ends, and cut each ear in half lengthwise to create corn ribs.
  2. Combine olive oil, sweet paprika, garlic powder, salt, and pepper in a bowl and brush this mixture onto each corn rib.
  3. Preheat your air fryer to 180°C (355°F) and arrange the seasoned corn ribs in a single layer. Air-fry for 15-20 minutes, flipping halfway through.
  4. Melt vegan butter in a small pan, stir in olive oil and Aleppo chili flakes, and season with salt.
  5. Mix vegan cream cheese with lime zest and a splash of lime juice until smooth, and refrigerate for optimal flavor.
  6. Plate the corn ribs, dollop with lime zest cream cheese, drizzle with Aleppo chili butter, and garnish with toasted pine nuts, green onions, and fresh coriander.
