For the Salad Filling
  • 1 can Chickpeas Drained and rinsed
  • 1 cup Celery Chopped
  • 2 tbsp Lemon Juice Freshly squeezed
  • 1/2 cup Mayonnaise Can substitute with vegan mayo
  • 1 tbsp Dijon Mustard Can substitute with yellow mustard
  • 1/2 cup Onion Diced
For the Grilling
  • 4 slices Bread For grilling, gluten-free if needed
  • 1 tbsp Butter Or oil for grilling
  • 1/2 cup Cheese Optional, dairy or plant-based

Method
 

Preparation Steps
  1. Drain and rinse one can of chickpeas, then transfer them to a mixing bowl. Mash the chickpeas until slightly chunky.
  2. Add chopped celery, lemon juice, mayonnaise, Dijon mustard, and diced onion to the mashed chickpeas. Stir until well combined.
  3. Spread the chickpea salad mixture onto one side of each bread slice. If using cheese, sprinkle it on some slices.
  4. Heat a skillet over medium heat with a little butter or oil. Grill the sandwiches for about 5-7 minutes until the bottom is golden brown.
  5. Flip the sandwiches carefully and grill the other side for an additional 5-7 minutes until golden and cheese is melted.
  6. Remove sandwiches from the skillet, let cool for a minute, then cut in half and serve warm.
