- Grate the white onion and squeeze out excess moisture. Grate the frozen butter.
- In a mixing bowl, combine ground chicken, grated onion, butter, minced garlic, Worcestershire sauce, mayonnaise, Dijon mustard, lemon zest, optional liquid smoke, and Parmesan cheese. Season with salt and pepper. Mix gently.
- Shape the mixture into four equal patties and press a thumbprint in the center.
- Chill the patties in the freezer for approximately 20 minutes.
- Preheat your grill to medium-high heat, brush grates with oil, and grill patties for 5-6 minutes per side until cooked through.
- Let patties rest for 5 minutes, then toast the buns on the grill. Assemble by placing each patty on a bun and topping with romaine lettuce, Caesar dressing, Parmesan, and croutons.
