Step-by-Step Instructions
  1. Preheat oven to 400°F (200°C) and grease a 9x13-inch baking dish.
  2. Slice chicken breasts in half horizontally for even cooking.
  3. Marinate chicken with olive oil, garlic, Italian seasoning, salt, and pepper for 15-30 minutes.
  4. Sauté spinach in olive oil over medium heat for 2-3 minutes until wilted.
  5. Mix cream cheese until smooth, then fold in sautéed spinach and half the mozzarella.
  6. Arrange marinated chicken in the baking dish, top with cream cheese mixture and remaining mozzarella.
  7. Bake for 20-30 minutes until chicken reaches 165°F (75°C) and cheese is golden brown.
  8. Let casserole rest for 5 minutes before serving.
