  • 2 cups Full Fat Cottage Cheese Low-fat cottage cheese can be used but might alter texture.
  • 3 large Eggs Ensure they're at room temperature for better mixing.
  • 1/2 cup Sweetener (Erythritol, Monk Fruit, Honey, Maple Syrup) Choose based on dietary preference.
  • 1 teaspoon Vanilla Extract Almond extract can be used as a substitute.
  • 1/4 cup Cornstarch Coconut flour may require more liquid.
  • 1 tablespoon Lemon Zest Optional for added brightness.
For the Topping
  • 2 cups Berries (Fresh or Frozen) Use blueberries, raspberries, or thawed cherries.

Method
 

Steps
  1. Preheat your oven to 350°F (175°C) and prepare a 9x9-inch baking dish.
  2. Blend the full-fat cottage cheese in a high-powered blender until smooth, then add eggs, sweetener, vanilla extract, cornstarch, and lemon zest. Blend until fully combined.
  3. Pour the batter into the prepared baking dish and bake for 10-15 minutes until edges are set and center is jiggly.
  4. Remove from oven and scatter berries over the top, pressing them down gently into the batter.
  5. Return to the oven and bake for an additional 30-35 minutes until top is golden and puffy.
  6. Allow to cool for at least 10 minutes before serving.
