Steps
- Preheat your oven to 350°F (175°C) and prepare a 9x9-inch baking dish.
- Blend the full-fat cottage cheese in a high-powered blender until smooth, then add eggs, sweetener, vanilla extract, cornstarch, and lemon zest. Blend until fully combined.
- Pour the batter into the prepared baking dish and bake for 10-15 minutes until edges are set and center is jiggly.
- Remove from oven and scatter berries over the top, pressing them down gently into the batter.
- Return to the oven and bake for an additional 30-35 minutes until top is golden and puffy.
- Allow to cool for at least 10 minutes before serving.
