- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine crumbled feta cheese with fresh dill, mint, lemon zest, and black pepper.
- On a clean surface, lay out one sheet of phyllo pastry and brush it generously with olive oil, then layer another sheet on top.
- Cut the layered phyllo pastry into four equal strips lengthwise.
- Spoon about 1 tablespoon of the feta filling onto the end of each phyllo strip.
- Fold the sides of the phyllo strip over the filling, then roll tightly away to encase the feta mixture.
- Brush the tops of all assembled rolls generously with olive oil.
- Bake the rolls for 18-20 minutes, or until the tops are golden brown and crispy.
- For the chili honey drizzle, warm honey with chili flakes and lemon juice in a small saucepan over low heat.
- Serve the rolls warm, drizzled with chili honey or with it on the side for dipping.
