  • 2 tbsp Dill Fresh, chopped
  • 2 tbsp Mint Fresh, chopped
  • 1 tsp Lemon Zest
  • 1/2 tsp Black Pepper Fresh ground preferred
For the Phyllo Rolls
  • 1 pkg Phyllo Pastry Defrosted
  • 1/4 cup Olive Oil For brushing
For the Chili Honey Drizzle
  • 1/2 cup Honey Or agave syrup for vegan version
  • 1 tbsp Chili Flakes Adjust for spice preference
  • 1 tbsp Lemon Juice Essential for flavor

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine crumbled feta cheese with fresh dill, mint, lemon zest, and black pepper.
  3. On a clean surface, lay out one sheet of phyllo pastry and brush it generously with olive oil, then layer another sheet on top.
  4. Cut the layered phyllo pastry into four equal strips lengthwise.
  5. Spoon about 1 tablespoon of the feta filling onto the end of each phyllo strip.
  6. Fold the sides of the phyllo strip over the filling, then roll tightly away to encase the feta mixture.
  7. Brush the tops of all assembled rolls generously with olive oil.
  8. Bake the rolls for 18-20 minutes, or until the tops are golden brown and crispy.
  9. For the chili honey drizzle, warm honey with chili flakes and lemon juice in a small saucepan over low heat.
  10. Serve the rolls warm, drizzled with chili honey or with it on the side for dipping.

These rolls are best enjoyed fresh, but you can store cooked rolls in an airtight container for up to 3 days. Freeze uncooked prepared rolls to bake directly from frozen.
