  • 1 cup Toppings (Sliced Cucumber, Tomato, Red Onion, Feta) consider adding olives or parsley
  • 1 cup Tzatziki Sauce store-bought or homemade

Step-by-Step Instructions
  1. Start by placing your boneless, skinless chicken thighs directly into the crockpot.
  2. In a mixing bowl, combine plain Greek yogurt, fresh lemon juice, minced garlic, olive oil, dried oregano, salt, and black pepper. Whisk until smooth.
  3. Pour the marinade over the chicken thighs, ensuring each piece is nicely coated. Cover and set to cook on low for 6-8 hours or high for 3-4 hours.
  4. While the chicken is cooking, prepare your fresh toppings by slicing cucumbers, tomatoes, and red onions.
  5. Once the chicken is cooked, remove and shred it using two forks. Spoon into warm pita pockets, add toppings, and drizzle with tzatziki.
  6. Serve the assembled pitas for a festive family meal. Customize with extra toppings if desired.
