Step-by-Step Instructions for Crockpot Apple Cider Chicken Thighs
  1. Thinly slice 2 Honeycrisp apples and 1 medium yellow onion. Mince 3 cloves of garlic.
  2. In a bowl, whisk together 2 cups of apple cider, 1 tablespoon of Dijon mustard, 1 tablespoon of apple cider vinegar, 1 tablespoon of brown sugar, 1 teaspoon of salt, and 0.5 teaspoon of black pepper.
  3. Drizzle 1 tablespoon of olive oil at the bottom of the crockpot. Layer the sliced onions and apples evenly.
  4. Place 2 pounds of boneless, skinless chicken thighs over the layered vegetables. Sprinkle fresh rosemary and thyme.
  5. Pour the prepared apple cider sauce over the chicken, ensuring it coats every piece, and add the minced garlic on top.
