- Slice the medium yellow onions thinly and layer them evenly at the bottom of your 6-quart crock pot.
- Arrange the frozen meatballs on top of the sliced onions in the crock pot.
- Combine the beef broth, brown gravy mix, garlic, black pepper, thyme, white wine vinegar, and water in a bowl, whisk until smooth.
- Pour the sauce over the meatballs and onions, cover, and cook on high for 2½ to 3½ hours or on low for 5 to 6 hours.
- Whisk together cornstarch and ¼ cup of water, then pour it over the meatballs and stir gently.
- Sprinkle Gruyere cheese over meatballs, cover, and cook for an additional 10 minutes on high until cheese has melted.
- Serve over mashed potatoes, rice, or noodles, or use toothpicks for appetizers.
