Preparation Steps
- Marinate Chicken: In a mixing bowl, whisk together minced garlic, five-spice powder, and brown sugar. Coat chicken thighs thoroughly and marinate for at least 30 minutes or up to 2 hours.
- Prepare Coating: Combine cornstarch, baking powder, and half of the five-spice powder in a bowl. Mix well and set aside.
- First Fry: Heat oil to 325°F (160°C). Fry marinated chicken in batches for 3–4 minutes until golden brown. Drain on paper towels.
- Second Fry: Increase oil temperature to 375°F (190°C) and fry chicken again for 2–3 minutes until crispy. Season with remaining five-spice powder, salt, and optional MSG.
- Fried Basil: Fry fresh basil leaves in hot oil for 20-30 seconds until fragrant. Toss onto chicken before serving.
