Preparation Steps
- In a large mixing bowl, combine crushed club crackers, cream, one egg, pimentos, minced jalapenos, parsley, green onion, and your chosen seasonings. Fold in the crab meat and chill for 20 minutes.
- Slice the jalapenos in half lengthwise and remove seeds. Fill each half with crab mixture and freeze for 15 minutes.
- Set up a breading station with flour, egg wash, and panko crumbs.
- Dredge stuffed jalapenos in flour, then dip in egg wash, and roll in panko crumbs. Freeze for 30 minutes.
- Heat oil in a deep pot to 340-350°F. Fry each jalapeno for about 5 minutes until golden.
- Remove fried jalapenos and let them drain on paper towels. Serve immediately with Kick in the Pants Ranch.
