Ingredients
  

For the Crab Filling
  • 1 cup Fresh crab meat Substitute with shrimp or lobster if desired.
  • 1 cup Imitation crab Chop finely for better distribution.
  • 1 cup Club crackers Can be replaced with crushed saltines.
  • 1 4 oz Pimentos Optional for flavor.
  • 1 2 tbsp Cream Sour cream can be used for a twist.
For the Jalapenos
  • 12 pieces Jalapenos Mini bell peppers can be used for a milder option.
  • 1 2 tbsp Parsley Can be substituted with chives.
  • 1 1 Egg Flaxseed meal mixed with water can be used as a vegan alternative.
For the Seasoning & Breading
  • 1 tsp Thyme Adjust to taste.
  • 1 1 tsp Garlic powder
  • 1 1 tsp Onion powder
  • 1 1 tsp Salt
  • 1 1 tsp Pepper
  • 1 1/2 cup Flour For dredging.
  • 1 1 cup Panko bread crumbs Regular breadcrumbs can be substituted.
For Frying
  • 2 cups Oil Canola, peanut, or safflower oil works well.
For Dipping
  • 1 cup Kick in the Pants Ranch Adjust horseradish for spice level.

Method
 

Preparation Steps
  1. In a large mixing bowl, combine crushed club crackers, cream, one egg, pimentos, minced jalapenos, parsley, green onion, and your chosen seasonings. Fold in the crab meat and chill for 20 minutes.
  2. Slice the jalapenos in half lengthwise and remove seeds. Fill each half with crab mixture and freeze for 15 minutes.
  3. Set up a breading station with flour, egg wash, and panko crumbs.
  4. Dredge stuffed jalapenos in flour, then dip in egg wash, and roll in panko crumbs. Freeze for 30 minutes.
  5. Heat oil in a deep pot to 340-350°F. Fry each jalapeno for about 5 minutes until golden.
  6. Remove fried jalapenos and let them drain on paper towels. Serve immediately with Kick in the Pants Ranch.
