For the Tostones
  • 2 Green Plantains firm, green
  • 1 inch Vegetable Oil for frying
  • to taste Salt sprinkled on hot tostones
For the Black Bean Purée
  • 1 can Black Beans rinsed
  • 2 cloves Garlic minced
  • 1 teaspoon Ground Cumin
  • to taste Chili Powder adjust for heat level
  • 1 Lime Juice fresh-squeezed
For Toppings
  • 1 Ripe Avocado diced
  • to taste Cotija Cheese crumbled, or vegan cheese
  • to taste Chopped Cilantro optional

Method
 

Step-by-Step Instructions
  1. Peel the green plantains and cut them into 1-inch thick discs.
  2. Heat vegetable oil in a large skillet to 350°F (175°C).
  3. Fry the plantain discs for about 2 minutes on each side until lightly golden.
  4. Flatten each fried plantain slice to approximately 1/4 inch thickness.
  5. Return the flattened plantains to the hot oil and fry for 2-3 minutes until crispy.
  6. In a blender, combine the black beans, garlic, cumin, chili powder, and lime juice. Blend until smooth.
  7. Spread the black bean purée over each crispy tostone, top with avocado and cotija cheese.
  8. Serve immediately for the best experience.
