  • 2-3 tablespoons Cornmeal for sprinkling

  • 1.5 cups Birria Consommé divided
  • 1.5 cups Shredded Cheese (Oaxaca or Mozzarella) or 4-Cheese Mexican Blend
  • 1.5 cups Leftover Beef Birria main ingredient
  • 0.5 medium Red or White Onion thinly sliced
  • to taste Fresh Cilantro for garnish
  • as needed Lime Wedges served on the side

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 500°F (260°C) with a pizza stone inside for 45 minutes.
  2. Roll or stretch the fresh pizza dough to about ¼-½ inch thick.
  3. Spread ⅓ cup of birria consommé evenly over the dough, then layer 1½ cups of shredded cheese, followed by 1½ cups of leftover beef birria, finishing with another ½ cup of cheese on top.
  4. Carefully transfer the pizza onto the preheated pizza stone and bake for 10-15 minutes.
  5. Warm the reserved birria consommé in a small saucepan over low heat.
  6. Garnish the baked pizza with sliced onion and cilantro, cut into slices, and serve with lime wedges and warmed consommé.
