- Preheat the oven to 500°F (260°C) with a pizza stone inside for 45 minutes.
- Roll or stretch the fresh pizza dough to about ¼-½ inch thick.
- Spread ⅓ cup of birria consommé evenly over the dough, then layer 1½ cups of shredded cheese, followed by 1½ cups of leftover beef birria, finishing with another ½ cup of cheese on top.
- Carefully transfer the pizza onto the preheated pizza stone and bake for 10-15 minutes.
- Warm the reserved birria consommé in a small saucepan over low heat.
- Garnish the baked pizza with sliced onion and cilantro, cut into slices, and serve with lime wedges and warmed consommé.
