  3. Preheat the Broiler: While fries cook and sauce chills, preheat oven broiler to low with the rack in the center.
  4. Assemble the Fries: Transfer cooked fries to a large baking sheet in a single layer. Sprinkle mozzarella cheese followed by crumbled feta over the fries.
  5. Broil the Cheesy Topping: Place baking sheet under broiler for about 5 minutes or until cheese melts and bubbles, watching closely to prevent burning.
