Preparation
  1. Cut fresh salmon fillets into 1-inch cubes and pat dry with paper towels.
  2. Set up a breading station with bowls of flour, beaten eggs, and panko breadcrumbs mixed with seasonings.
  3. Coat each salmon cube in flour, dip in eggs, then press into the panko mixture.
  4. Heat vegetable oil in a skillet until shimmering at about 350°F. Fry salmon bites for 2-3 minutes on each side until golden brown.
  5. In a bowl, mix together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice for the bang bang sauce.
  6. Remove salmon bites from the skillet and drain on paper towels. Serve on a platter drizzled with bang bang sauce.
