Preparation
- Cut fresh salmon fillets into 1-inch cubes and pat dry with paper towels.
- Set up a breading station with bowls of flour, beaten eggs, and panko breadcrumbs mixed with seasonings.
- Coat each salmon cube in flour, dip in eggs, then press into the panko mixture.
- Heat vegetable oil in a skillet until shimmering at about 350°F. Fry salmon bites for 2-3 minutes on each side until golden brown.
- In a bowl, mix together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice for the bang bang sauce.
- Remove salmon bites from the skillet and drain on paper towels. Serve on a platter drizzled with bang bang sauce.
