Step-by-Step Instructions for Potato Au Gratin
  1. Preheat your oven to 400°F (200°C) and lightly grease a 10x7 inch casserole dish.
  2. In a small pot, whisk heavy cream, minced garlic, thyme, sage, kosher salt, black pepper, and nutmeg over medium heat for 5 minutes.
  3. Peel and thinly slice sweet potatoes to about ⅛ inch thick, ideally using a mandolin slicer.
  4. Arrange a layer of sweet potatoes in the dish, pour some cream mixture over and sprinkle with Romano cheese.
  5. Continue layering sweet potato slices with cream mixture and cheese until all ingredients are used.
  6. Top the final layer with a generous sprinkle of Romano cheese.
  7. Bake uncovered for 40 minutes, then cover with foil and bake for an additional 15 minutes.
  8. Allow to cool for 30 minutes before serving.
