- Preheat your oven to 400°F (200°C) and lightly grease a 10x7 inch casserole dish.
- In a small pot, whisk heavy cream, minced garlic, thyme, sage, kosher salt, black pepper, and nutmeg over medium heat for 5 minutes.
- Peel and thinly slice sweet potatoes to about ⅛ inch thick, ideally using a mandolin slicer.
