Instructions
  1. Prep the Chicken: Cut 2 pounds of chicken into thin strips and season with sea salt and ground pepper.
  2. Brown the Chicken: Heat a large skillet over medium-high heat, melt butter, and cook the chicken strips for about 8 minutes.
  3. Sauté Garlic and Onions: In the same skillet, add diced onion and cook for about 5 minutes, then add garlic and sauté until fragrant.
  4. Create the Sauce: Pour in chicken stock, add roasted red peppers, and let it simmer for about 5 minutes.
  5. Add Cream and Cheese: Stir in heavy cream and Parmesan cheese until smooth, then warm the sauce gently.
  6. Finish with Seasoning: Mix in Italian seasoning and pepperoncini, return chicken to skillet, and let it simmer.
  7. Serve: Remove from heat and serve over rice, pasta, or vegetables.
