- Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Reserve pasta water, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the sausage, breaking it into smaller pieces. Sauté until browned and cooked through, about 5-7 minutes.
- Add chopped onion and bell peppers to the skillet. Stir frequently and cook until softened, about 15-20 minutes.
- Stir in crushed tomatoes, heavy cream, and Italian seasoning. Bring to a simmer and thicken for about 5-7 minutes.
- Add the cooked pasta to the skillet and toss to coat in the sauce, using reserved pasta water to reach desired consistency if necessary.
- Remove from heat and stir in Parmesan cheese. Adjust seasoning with salt and pepper. Serve hot.
