  • 4 tablespoons butter or olive oil for lighter option
  • 1/4 cup flour or gluten-free flour
  • 2 cups milk or unsweetened almond milk
  • 2 cups cheddar cheese sharp, can blend with Gruyère
For the Topping
  • 1 cup breadcrumbs or panko for extra crunch
Optional Seasonings
  • to taste salt
  • to taste pepper add a pinch of cayenne for heat

Method
 

Cooking Instructions
  1. Fill a large pot with salted water and bring it to a boil. Add macaroni and cook for 7-8 minutes until al dente. Drain and set aside.
  2. In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute until golden brown.
  3. Pour in milk while whisking continuously. Cook for 4-5 minutes until sauce thickens. Stir in cheddar cheese until melted.
  4. Add macaroni to cheese sauce, folding until coated evenly.
  5. Preheat the oven to 350°F (175°C). Grease a baking dish and transfer mac and cheese mixture.
  6. Sprinkle breadcrumbs over the top, then bake for 20-25 minutes until golden brown.
