- Heat 2 tbsp of vegetable oil in a large pot over medium heat. Add 1 finely chopped onion and sauté for about 5 minutes until soft.
- Stir in 2 minced garlic cloves and 1 inch of grated ginger, cooking for another minute until fragrant. Add ½ cup of chopped tomato, 1 tsp each of turmeric, cumin, and coriander. Cook for 2 minutes.
- Add 1 cup of rinsed lentils and 2 cups of broth. Bring to a boil, reduce heat, cover partially, and let simmer for 15-20 minutes until lentils are tender.
- If desired, stir in ¾ cup of coconut milk and simmer for an additional 5 minutes.
- Taste and adjust salt. If too thick, add a splash of broth or water. Garnish with fresh cilantro before serving.
