Ingredients
  

For the Base
  • 2 tbsp Olive Oil Can substitute with avocado oil.
  • 2 cloves Garlic, minced Use garlic powder if fresh isn’t available.
  • 1 small Onion, chopped Red onion preferred, but yellow or white works too.
  • 1 tsp Oregano Can substitute with Italian seasoning.
  • 1.5 tsp Cumin Essential for chili flavor.
  • 1 tsp Salt Adjust to taste.
  • 0.5 tsp Pepper Cayenne can be added for more spice.
  • 0.5 tsp Paprika Smoked paprika can be used for additional depth.
  • 0.25 tsp Cayenne Pepper, optional Omit if you prefer milder chili.
For the Broth
  • 4 cups Chicken Stock Low-sodium stock is a good option.
  • 4 oz Green Chiles, canned Adjust based on heat preference.
For the Creaminess
  • 0.5 cup Heavy Whipping Cream Substitute with coconut cream for a dairy-free option.
  • 4 oz Cream Cheese, cubed Cut into smaller pieces to help it melt faster.
For the Protein
  • 3 cups Shredded Rotisserie Chicken Can also use cooked chicken breast.

Method
 

Directions
  1. Heat 2 tablespoons of olive oil in a large soup pot over medium-low heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Stir in minced garlic and cook for an additional 1-2 minutes until fragrant. Add oregano, cumin, salt, pepper, paprika, and optional cayenne pepper; sauté for about 1 minute.
  3. Pour in 4 cups of chicken stock and can of green chiles, stirring well. Bring the mixture to a low boil.
  4. Reduce heat to medium-low and let the chili simmer uncovered for roughly 25 minutes, stirring occasionally.
  5. Lower the heat and add ½ cup of heavy whipping cream, cubed cream cheese, and shredded rotisserie chicken. Stir continuously for about 10-15 minutes.
  6. Remove from heat and taste; adjust seasoning if necessary. Let rest for a few minutes before serving.
