- Heat 2 tablespoons of olive oil in a large soup pot over medium-low heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in minced garlic and cook for an additional 1-2 minutes until fragrant. Add oregano, cumin, salt, pepper, paprika, and optional cayenne pepper; sauté for about 1 minute.
- Pour in 4 cups of chicken stock and can of green chiles, stirring well. Bring the mixture to a low boil.
- Reduce heat to medium-low and let the chili simmer uncovered for roughly 25 minutes, stirring occasionally.
- Lower the heat and add ½ cup of heavy whipping cream, cubed cream cheese, and shredded rotisserie chicken. Stir continuously for about 10-15 minutes.
- Remove from heat and taste; adjust seasoning if necessary. Let rest for a few minutes before serving.
