  • 1 medium Onion thinly sliced
For the Creamy Sauce
  • 2 cups Whole Milk or almond milk
  • 1/4 cup Cornstarch
  • 1 tablespoon Yellow Mustard
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Black Pepper adjust to taste
For the Cheese
  • 2 cups White Cheddar Cheese or Monterey Jack

Step-by-Step Instructions
  1. Start by greasing the inside of your slow cooker with oil or cooking spray.
  2. Layer 1/3 of the thinly sliced onions at the bottom, followed by a layer of potato slices and a generous sprinkling of cheese. Repeat twice more, finishing with potatoes and cheese.
  3. In a measuring cup, whisk together whole milk, cornstarch, yellow mustard, salt, and black pepper until smooth.
  4. Pour the prepared creamy sauce evenly over the layered ingredients.
  5. Cover and cook on high for about 3 to 4 hours until potatoes are tender and the sauce is bubbling.
  6. Allow to rest for about 20 minutes before serving.
