  • 1 cup Heavy Cream Can use half-and-half for a lighter option.
  • 1 cup Gruyere Cheese Grated, Emmental is a substitute.
  • to taste Salt
  • to taste Pepper
  • optional Parsley For garnish, can also use basil or chives.

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil, add pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet, melt butter over medium heat. Add leeks and sauté until golden and caramelized, about 10 minutes.
  3. Add chopped mushrooms to the caramelized leeks, cooking for about 5 minutes until tender and moisture evaporates.
  4. Pour in heavy cream and whisk in grated Gruyere cheese, stirring until smooth and creamy, about 3-4 minutes.
  5. Add drained pasta to the skillet, toss to combine and season with salt and pepper to taste.
  6. Serve hot, garnished with parsley for freshness.
