Method
 

Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Cook the wild rice and quinoa according to the package instructions.
  3. Cut the sweet potatoes into bite-sized cubes and toss them with olive oil, salt, and spices, then roast for 20-25 minutes.
  4. In a large bowl, add your shredded kale and massage with a small amount of vinaigrette until wilted.
  5. Wash and slice the apples into thin wedges or cubes.
  6. Assemble the bowls with kale, wild rice, quinoa, roasted sweet potatoes, apples, chopped nuts, smoked gouda, and vinaigrette.
  7. Serve warm, at room temperature, or chilled.
