Preparation Steps
  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin generously with olive oil.
  2. In a large mixing bowl, crack the large eggs and whisk until well blended and slightly frothy.
  3. Stir in the cottage cheese until fully integrated and smooth.
  4. Add the shredded cheddar cheese, mixing until evenly distributed.
  5. Fold in chopped spinach, red bell pepper, garlic powder, salt, black pepper, and onion powder.
  6. In a small bowl, mix baking powder with a splash of water, then fold into the egg mixture.
  7. Pour in the olive oil and mix until smooth and well-combined.
  8. Spoon the batter into muffin cups, filling each about three-quarters full.
  9. Bake for 18 to 20 minutes until they rise and turn golden. Insert a toothpick to check doneness.
  10. Allow to cool in the tin for about 5 minutes, then remove carefully.
