Preparation Steps
- Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin generously with olive oil.
- In a large mixing bowl, crack the large eggs and whisk until well blended and slightly frothy.
- Stir in the cottage cheese until fully integrated and smooth.
- Add the shredded cheddar cheese, mixing until evenly distributed.
- Fold in chopped spinach, red bell pepper, garlic powder, salt, black pepper, and onion powder.
- In a small bowl, mix baking powder with a splash of water, then fold into the egg mixture.
- Pour in the olive oil and mix until smooth and well-combined.
- Spoon the batter into muffin cups, filling each about three-quarters full.
- Bake for 18 to 20 minutes until they rise and turn golden. Insert a toothpick to check doneness.
- Allow to cool in the tin for about 5 minutes, then remove carefully.
- Serve warm or allow to cool completely before storing in an airtight container.
