Preparation
- Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking dish.
- In a large mixing bowl, combine the cottage cheese, eggs, maple syrup (if using), and vanilla extract. Whisk until smooth.
- Add almond flour, baking powder, cinnamon, and salt to the wet mixture. Stir until well combined, then fold in the grated carrots.
- If using, fold in chopped nuts and/or raisins or shredded coconut until evenly distributed.
- Pour the batter into the prepared baking dish and smooth the top. Bake for 25–30 minutes or until golden brown and a toothpick comes out clean.
- Remove from the oven and let cool for at least 10 minutes before slicing into squares.
