Batter
  • 1 cup Cottage Cheese or dairy-free alternative
  • 2 large Eggs
  • 1 cup Almond Flour or oat flour
  • 1 cup Grated Carrot finely grated
  • 1/4 cup Maple Syrup or Honey optional
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Powder fresh
  • 1 tsp Cinnamon or nutmeg/ginger
  • 1/4 tsp Salt
Optional Add-Ins
  • 1/2 cup Chopped Walnuts or Pecans optional
  • 1/2 cup Raisins or Shredded Coconut optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking dish.
  2. In a large mixing bowl, combine the cottage cheese, eggs, maple syrup (if using), and vanilla extract. Whisk until smooth.
  3. Add almond flour, baking powder, cinnamon, and salt to the wet mixture. Stir until well combined, then fold in the grated carrots.
  4. If using, fold in chopped nuts and/or raisins or shredded coconut until evenly distributed.
  5. Pour the batter into the prepared baking dish and smooth the top. Bake for 25–30 minutes or until golden brown and a toothpick comes out clean.
  6. Remove from the oven and let cool for at least 10 minutes before slicing into squares.
