  2. Step 2: Layer Vegetables - In your slow cooker, start by placing the heartier vegetables like chopped onions and carrots at the bottom. Next, lay the browned beef on top, followed by slices of zucchini and halved cherry tomatoes.
  3. Step 3: Add Liquid & Season - Pour in your choice of broth or crushed tomatoes, about one cup, sprinkle in fresh herbs, minced garlic and a splash of red wine vinegar.
  4. Step 4: Cook - Cover the slow cooker and set it to low heat for 7–8 hours or high for 4–5 hours until the beef becomes fork-tender.
