Step‑by‑Step Instructions for Cinnamon Sugar Soft Pretzels
  1. In a small bowl, mix together 1 cup of warm water, 1 packet of active dry yeast, and 2 tablespoons of granulated sugar. Allow this mixture to sit for about 5-10 minutes until it becomes frothy.
  2. In a large mixing bowl, combine 4 cups of all-purpose flour and 1 teaspoon of salt. Create a well in the center and pour in the yeast mixture along with 2 tablespoons of melted unsalted butter.
  3. Turn the dough out onto a floured surface and knead it for 5-7 minutes until smooth and elastic.
  4. Place the kneaded dough into a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 to 1.5 hours, or until doubled in size.
  5. Once risen, punch the dough down, divide into 8 equal portions, and roll each into an 18-inch rope. Shape into pretzels.
  6. Preheat your oven to 375°F (190°C). In a large pot, bring 10 cups of water to a boil and add 2/3 cup of baking soda.
  7. Carefully lower each pretzel into the boiling water for about 30 seconds, then remove with a slotted spoon and place on a parchment-lined baking sheet.
  8. Brush each pretzel with a beaten egg and sprinkle with a mixture of granulated sugar and ground cinnamon.
  9. Bake the pretzels for 12-15 minutes, or until golden brown and shiny.
  10. Remove from the oven and allow to cool slightly on a wire rack before serving.
