Step-by-Step Instructions
  1. In a medium bowl, whisk together flour, cinnamon, baking powder, and salt until combined.
  2. In a small bowl, dissolve coffee granules in vanilla extract, stirring until smooth.
  3. In a large bowl, beat melted butter and brown sugar until smooth, then mix in egg and coffee mixture.
  4. Fold dry ingredients into the wet ingredients until just combined.
  5. Cover the bowl with plastic wrap and refrigerate the dough for 30 minutes.
  6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Scoop chilled dough into balls, roll in granulated sugar and then in powdered sugar.
