  • 2 large Bananas Sweet and moist
  • 1/4 cup Peanut Butter Creamy; can be swapped with almond or cashew butter
For the Coating
  • 11.5 oz Chocolate Chips Use dark or white chocolate chips if preferred
  • 2 tsp Coconut Oil Optional; omit for thicker coating

Method
 

Step-By-Step Instructions
  1. Slice the ripe bananas into 1/4-inch thick rounds and place half on a parchment-lined baking sheet.
  2. Soften peanut butter in a microwave-safe bowl for 30 to 45 seconds, then spoon 1/2 teaspoon onto each banana slice.
  3. Press remaining banana slices on top of the peanut butter-covered slices to create sandwiches.
  4. Freeze the assembled bites for about 1 hour until solid.
  5. Melt chocolate chips and coconut oil in a microwave-safe bowl until fully melted and smooth.
  6. Dip each frozen banana bite into the melted chocolate and place back on the baking sheet.
  7. Return to the freezer for at least 1 additional hour to allow chocolate to set.
  8. Store in a freezer-safe bag or container for up to 1 month.
