Preparation Steps
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper. Whisk until smooth.
- Coat the chicken thighs in the marinade and let marinate for at least 15 minutes.
- Boil water in a large pot with salt, add russet potatoes, and cook for 15-20 minutes until fork-tender.
- Drain potatoes, return them to the pot, and mix in milk, butter, and smoked gouda. Mash until smooth.
- Transfer chicken to a baking dish skin-side up and bake for 25-30 minutes or until the internal temperature is 165°F (75°C).
- Serve chicken with smoked gouda mashed potatoes and drizzle with pan juices.
