Preparation Steps
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper. Whisk until smooth.
  3. Coat the chicken thighs in the marinade and let marinate for at least 15 minutes.
  4. Boil water in a large pot with salt, add russet potatoes, and cook for 15-20 minutes until fork-tender.
  5. Drain potatoes, return them to the pot, and mix in milk, butter, and smoked gouda. Mash until smooth.
  6. Transfer chicken to a baking dish skin-side up and bake for 25-30 minutes or until the internal temperature is 165°F (75°C).
  7. Serve chicken with smoked gouda mashed potatoes and drizzle with pan juices.
