Ingredients
  

Chickpea Flour Method
  • 1 cup Chickpea Flour Can substitute with other pulse flours.
  • 3 cups Water Adjust for firmer texture.
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Turmeric Optional for color and flavor.
Dried Chickpeas Method
  • 1 cup Dried Chickpeas Can substitute with canned chickpeas.
  • 2 cups Water For blending.

Method
 

Chickpea Flour Method Steps
  1. In a mixing bowl, whisk together chickpea flour and water until smooth.
  2. In a saucepan, bring 3 cups of water to a rolling boil over medium-high heat.
  3. Gradually pour the chickpea flour mixture into the boiling water, whisking constantly.
  4. Reduce heat to low and cook, stirring for about 5-6 minutes until mixture thickens.
  5. Remove from heat, pour into a greased container, and allow to cool for at least 30 minutes.
Dried Chickpeas Method Steps
  1. Soak 1 cup of dried chickpeas in water overnight, then drain.
  2. Blend soaked chickpeas with 2 cups of fresh water until smooth.
  3. Strain the mixture using a nut-milk bag or cheesecloth to extract the liquid.
  4. Heat the strained liquid in a saucepan, stirring constantly for 8-10 minutes until thickened.
  5. Pour into a greased mold, smooth the surface, and cool for at least 30 minutes.
