Step-by-Step Instructions for Date Cookies
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small pot, bring water to a gentle boil and add your pitted dates. Simmer for about 10 minutes until soft.
  3. Transfer your rolled oats into a blender and pulse until you achieve a flour-like consistency.
  4. In a mixing bowl, combine the blended oats with the natural peanut butter until well combined.
  5. Drain the softened dates and blend them with a splash of the reserved water until smooth.
  6. Combine the smooth date mixture with the oat and peanut butter blend until well mixed.
  7. Roll the dough into tablespoon-sized balls and place them on the prepared cookie sheet.
  8. Flatten each cookie ball with a fork and bake for 10-12 minutes, rotating halfway through.
