Cookie Preparation
- In a large mixing bowl, combine cocoa powder, all-purpose flour, granulated sugar, brown sugar, and a pinch of salt. Melt unsalted butter, then add it along with eggs and vanilla extract. Mix until just combined.
- If the cookie dough is too sticky, cover and refrigerate for 15-30 minutes to firm up.
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Drop rounded tablespoons of dough onto the sheet, spacing 2 inches apart. Bake for 10-12 minutes until edges are set.
- In a saucepan, heat heavy cream until simmering. Pour over chopped chocolate, let sit for 2-3 minutes, then stir until smooth.
- Spread ganache on cooled cookies and top with sprinkles. Let set before serving.
