Ingredients

For the Cookie Dough
  • 1 cup unsweetened Dutch-processed cocoa powder Provides deep chocolate flavor; substitute with regular unsweetened cocoa if needed.
  • 1 cup all-purpose flour Gives structure to the cookies; a gluten-free flour blend can be used for a gluten-free option.
  • 1 cup granulated sugar Adds sweetness and tenderness; adjust the quantity for a less sweet cookie.
  • 1 cup brown sugar Richens flavor and moisture; can be swapped with extra granulated sugar in a pinch.
  • 1 cup unsalted butter Contributes flavor and texture; use unsalted for better control over salt content.
  • 2 large eggs Binds ingredients and adds moisture; make sure they’re at room temperature for optimal mixing.
  • 2 teaspoons vanilla extract Enhances the overall flavor; opt for a high-quality extract for the best results.
For the Ganache Topping
  • ½ cup heavy cream Creates a rich ganache topping; whole milk can make a lighter version.
For Decoration
  • 1 cup sprinkles Add a fun crunch and color; can be omitted for a sophisticated look.

Equipment

  • Mixing bowl
  • Whisk
  • Baking sheet
  • Parchment paper
  • Cookie scoop
  • Saucepan

Method

Cookie Preparation
  1. In a large mixing bowl, combine cocoa powder, all-purpose flour, granulated sugar, brown sugar, and a pinch of salt. Melt unsalted butter, then add it along with eggs and vanilla extract. Mix until just combined.
  2. If the cookie dough is too sticky, cover and refrigerate for 15-30 minutes to firm up.
  3. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Drop rounded tablespoons of dough onto the sheet, spacing 2 inches apart. Bake for 10-12 minutes until edges are set.
  4. In a saucepan, heat heavy cream until simmering. Pour over chopped chocolate, let sit for 2-3 minutes, then stir until smooth.
  5. Spread ganache on cooled cookies and top with sprinkles. Let set before serving.
